Louie Mueller Barbecue is not merely Taylor's best restaurant — it is one of the most celebrated pit barbecue establishments in the United States, the recipient of the James Beard Foundation America's Classics Award (one of only a handful of Texas BBQ restaurants to receive this recognition), and the anchor of Taylor's growing identity as a BBQ destination in its own right. The restaurant has operated on West 2nd Street in Taylor's historic downtown since 1949, and the building carries the history: black-stained walls from decades of smoke, antique memorabilia, and the unmistakable atmosphere of a place that has been doing one thing seriously for three generations. The brisket is the standard: properly smoked with post oak, dark and crusty bark, tender and fatty in the way that Central Texas pit BBQ is supposed to be. The beef ribs are enormous and extraordinary when available — call ahead to confirm. The ring bologna is a Mueller signature worth trying.
