Kreuz Market is not merely a BBQ restaurant — it is a Texas institution, a cultural landmark, and one of the reasons the Texas Legislature officially designated Lockhart the BBQ Capital of Texas. Founded in 1900 as a meat market and smokehouse, Kreuz has been cooking over wood fire in some form for over a century. The current location on North Colorado Street houses massive wood-burning pits that run continuously, producing the brisket, shoulder clod, and house-made sausage that have made Kreuz the benchmark against which serious Texas BBQ is measured. The rules at Kreuz are non-negotiable: no barbecue sauce is served. No forks are provided. Meat is served on butcher paper. This isn't pretension — it's the continuation of a tradition that predates most of what we call Texas BBQ culture.
